Easy Mediterranean Food Options to Make in the Comfort of Your Dorm
These easy food recipes are essential for those days where the dining hall is not on your to-do list. If you’re also on a college budget, these Mediterranean diet options help you save some money from buying unhealthy food.
Shakshuka avocado toast
Toast with an avocado spread is all the rage, but for the price at the restaurants, you can get all the ingredients and make it yourself. This twist on avocado toast is tasty to make and a great recipe for easy Mediterranean food options.
One garlic clove, chopped
Two eggs
Two tablespoons olive oil
1/2 to 1 cup vegetable stock
1/2 small red onion, finely chopped
One bag frozen spinach, thawed out and the excess water squeezed out
Salt and pepper
For avocado spread
One avocado, cut into small dice
One lime
One red chili pepper, thinly sliced
1/2 red onion, finely chopped
Microwave your eggs in a mug with plastic wrap cover for 50 seconds. If you have access to an electric stove, grab a pan and heat up the olive oil, onion, salt, pepper, and garlic until soft. Add the spinach and vegetable stock to cook until liquid is gone.
Create the avocado spread by combining the avocado, lime, red chili pepper, and red onion. Place spread on toast and top with the spinach mixture and top with an egg.
Baked sweet potatoes with mediterranean toppings
If you are a lucky student with access to an oven, these baked sweet potatoes are filling and comforting for those late night study sessions.
Two sweet potatoes
½ teaspoon each of cumin, cinnamon, smoked paprika, and coriander
½ tablespoon of olive oil
One 15 oz can of chickpeas, rinsed and drained
Salt for taste
¼ cup of chopped parsley
¼ cup diced cherry tomatoes
For the garlic herb sauce
One teaspoon of dried dill
Three cloves of garlic
Juice of half a lemon
Water for thinning the sauce
¼ cup of hummus or tahini
Scrub and rinse the sweet potatoes and cut in half. Rub with olive oil and place on a baking sheet, along with the chickpeas and seasonings. Bake at 400 degrees F for 20 minutes.
Add all the garlic herb ingredients in a bowl to mix them. Toss the parsley and cherry tomatoes in a little lemon juice. Take the sweet potatoes out of the oven and place on a plate. Place the chickpeas on the sweet potatoes and top with sauce and tomato and parsley mixture.
